To prepare linguine with clams according to the traditional recipe, first, we boil water and send the pasta to cook. We sauté a clove of garlic in a frying pan. We add, as soon as the garlic is golden, the clams, taking care to remove them as soon as they open. At this point, let’s shell them, leaving some whole for serving, and add them to the pan, in equal parts: Yellow and red dates. Using two tomatoes, with different acidity, will make the dish even more flavorful.
At this point we remove the pasta from the heat 3 minutes before the suggested time and complete the preparation in the pan, helping ourselves with a little cooking water to whisk. We add the clams, serve on a plate.
